Elly's Zucchini Bread

Elly's Zucchini Bread

  • 3 Eggs
  • 1 Cup Vegetable Oil
  • 2 Cups Sugar
  • 3 Cups Flour
  • 1/4 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 1 tsp. Vanilla
  • 1/4 tsp. Cinnamon
  • 2 Cups Shredded Zucchini
  • 1/2 Cup Chopped Pecans (optional)
Preheat oven 350. Shred your zucchini. In a large bowl beat your eggs. Add remaining ingredients and beat until well blended. Distribute batter equally into two loaf (bread) pans. Bake for 1 hour. Bread will be well browned and would be pulled away from sides of the pan.
When I make this Zucchini Bread I pat the tops before baking I think it helps with preventing some cracking on the tops.
