Pie Filling Cake

Recipe for Chocolate Cherry Pie Filling Cake
  1. 1 Box Chocolate cake mix
  2. 1 Can Cherry pie filling
  3. 2 Eggs
Preheat oven to 350. Grease a 9x13 cake pan
In a bowl lightly beat the eggs, stir in the cherry pie filling. Add the box of Chocolate cake mix. Mix until thoroughly combined.
Spread into your greased pan. Bake for 35 minutes

You can mix different cakes with different pie fillings to make other super yummy cakes just like this one. And I didn't even need any icing and it was still so delicious. I had a few co-workers try it and they all complimented it and wanted more.
One example-Apple Pie Filling and any light colored cake mix. Not really sure how they will all test but experiment with different combinations. Results could be just as fascinating as this Chocolate Cherry Pie Filling Cake

Elly's Zucchini Bread

Elly's Zucchini Bread

  • 3 Eggs
  • 1 Cup Vegetable Oil
  • 2 Cups Sugar
  • 3 Cups Flour
  • 1/4 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 1 tsp. Vanilla
  • 1/4 tsp. Cinnamon
  • 2 Cups Shredded Zucchini
  • 1/2 Cup Chopped Pecans (optional)
Preheat oven 350. Shred your zucchini. In a large bowl beat your eggs. Add remaining ingredients and beat until well blended. Distribute batter equally into two loaf (bread) pans. Bake for 1 hour. Bread will be well browned and would be pulled away from sides of the pan.
When I make this Zucchini Bread I pat the tops before baking I think it helps with preventing some cracking on the tops.

V8 juice spagetti sauce for diabetics

Who would have thought that you could use V8 juice for spaghetti sauce, not me.  I was visiting a neighbor who making spaghetti and meat balls.  Needless to say when she got out a bottle of V8 juice and poured it in her pan with her meatball she started telling me that because she is diabetic that she uses the V8 as her sauce, I was surprised, stunned, well not sure what I was.  Maybe she seen a strange look on my face and thought she needed to explain to me about the V8 juice. She also told me she uses just a few spices to give it that sauce taste not a tomato taste.  She added some oregano, I believe Mrs Dash or something like that. And that was it. Time to let it simmer with the meatballs.  I'm definitely going to pass this on to my step-mother.

Just for the record I'm not saying it is for sure for diabetics but my neighbor who is diabetic told this is what she does because of her being a diabetic. I, in no way know claim that I know for certain it is good for diabetics. I am just passing on a tip from a diabetic who uses V8 juice for her spaghetti sauce. Please check the labels to be sure you could have the V8 juice.
